Why: Why? Because I crave an excellent breakfast no matter how far I have to travel. A crunchy plate of hashbrowns, a runny yoke, a crisp waffle, snappy bacon. Do I need to keep going? I saw Over Easy on one of my favorite food network shows, Diners, Drive-ins, and Dives, and knew I had to get there as soon as possible.

Since I had already been introduced to the menu on Triple D, I went into the restaurant thinking waffle or pancakes and some of those super fresh eggs. Not so. I ended up ordering the traditional eggs benedict with their special hollandaise sauce and hashbrowns and was not disappointed.

The eggs were extremely fresh, the hollandaise was one of the best I ever had, and there was so much food I had to take almost half of it home. The mixture of the salty bacon, the creamy hollandaise, the soft jalapeño biscuit, and the runny egg filled my stomach for hours but also set my tastebuds on fire. The mingling of flavors was very complex yet still reminded me of a home-cooked meal.

I think that’s one identifier of a great chef: they can take a simple meal, something that everyone has had many times before, and spin it by experimenting with the flavors and adding extra depth to the dish to set it apart from Mom’s. I mean how many times have you had a jalapeño biscuit?

Another great dish I tasted was the wolfpack. Two eggs any style with bacon and choice of cheese sandwiched together between two layers of hashbrowns. If that doesn’t get your breakfast stomach growling then I don’t know what will. And using hashbrowns as a bread substitute is also something I’m very much on-board with. It comes on a plate looking like a layered cake of breakfast favorites. Every bite incorporates all the flavors of the farm-fresh eggs, crunchy bacon, melted cheese, and hashbrowns. How can you go wrong with that combination hitting your tongue each time? Next time I visit Over Easy, it’ll be a struggle between ordering the wolfpack, a waffle, or the soft and steaming pancakes I saw at the table next to me.
